Hell’s Kitchen: Ardesia will host a pâté-making class with Chef Amorette Casaus on Saturday, January 21 from 2 to 4 p.m. The class costs $40 per person before tax and gratuity, and includes snacks and beverages. [Grub Street]
Upstate: Mohonk Mountain House is holding a locavore weekend January 27 to 29, with a special dinner featuring dishes inspired by local chefs John Novi, Ric Orlando, Derek Corsino, and Mohonk’s executive chef, Jim Palmeri. Also: Tuthilltown Spirits tastings, wine tastings, and a cake-decorating workshop.
West Village: Flex Mussels is introducing a new Happier Hour from 5 to 7 p.m. every night, where restaurant-goers can enjoy $1 oysters and half-off wine, beer, and cocktails. [Grub Street]
The Growler Station will open its doors sometime next week, allowing beer devotees to fill up their 32-ounce and 64-ounce growlers with 24 varieties of craft beer. [Fork in the Road/VV]

The old facade is pretty much the only thing that remains.
Close readers of that rabbit hole that is the NYC food blogosphere will have noted that the chef at the new Acme is none other than Mads Refslund, a Dane who co-founded Noma in Copenhagen. It seems the Indochine team (Acme’s new owners, you’ll recall) convinced the chef to move to New York and work his New Nordic magic. He’s now offering fare in the categories of Raw, Cooked, Soil, and Sea/Land — a bit different than the fried chicken with myriad hot sauce choices you probably ate at the old Acme. Grub dug into the pearl barley and clams this weekend and can pronounce it delicious, if quite foamy. Scope out the full exciting lineup over on Diner’s Journal. [Diner's Journal/NYT]

He’s pouring, Chang’s drinking.
Over at Diner’s Journal, there are more details on the Dave Arnold–David Chang drinksplotion bar in the former Momofuku Milk Bar space, the back of Momufuku Ssam Bar. For one, the bar will be called Booker and Dax, the names of Arnold’s sons, and the name of a new cooking equipment company he’s also starting with David Chang. And it’s opening on Friday. The first menu will feature sixteen sick-genius cocktails at $14. So basically, all the wealthy-foodie-alkie-show-offs in the world are going to get wasted and go ballistic about it for a while. In a funny interview with Bon Appétit, Southern boy Ed Helms is all about the gravy and biscuits; praising his mama’s cauliflower with “like a bucket of cheese sauce on it”; and convincing any fried-food skeptics that even when it’s wrong, it’s right: “I don’t agree with the diet police on this one. Those of us who have tried Southern food and love it should stick with it. Even if it’s not good for the body, it’s good for the soul.” [Bon Appétit]

Laurie Jon Moran has assumed Michael Laiskonis’s old job as pastry chef at Le Bernardin. According to Diner’s Journal, Moran is 30; from England; and worked at Le Manoir aux Quat’Saisons near Oxford, then Daniel in New York, and most recently was pastry sous-chef at Per Se. Sounds very promising. Meanwhile, Laiskonis is having secret cream-puff parties and writing poetry about it. [Diner's Journal/NYT]

The only black label burger that matters!
“It’s like comparing a cell phone of the late eighties to the iPhone 4S!” Mark Pastore of LaFrieda tells Grub Street about Wendy’s Black Label Burger, a term the LaFriedas coined exclusively for their supreme Minetta Tavern blend. “What we created for Minetta Tavern is a totally different animal,” he says, no pun intended. “It’s flattering. It doesn’t bother us one bit. Will people get confused? No. Will Wendy’s steal some magic we created? Maybe, but that’s okay.” Incidentally, Pastore plans to try the $5 knockoff and does not plan on suing them, saying that you can’t trademark “Black Label,” a buzz word used by everyone from Ralph Lauren to Johnny Walker and now lady W, that wench!
