Paul Sevigny and Nur Khan reopened Don Hill's this week, bringing their devoted fashion clientele along with them. Under their co-stewardship, the Soho space is now adorned with graffiti penises, stills from Sasha Grey's best works, risqué photos of fishnet stockings, Harif Guzman's street art, video installations by Sante D'orazio, and text reading "Sick Pervert Ruined My Life!" The club hosted the Proenza Schouler after-party and a Yeah Yeahs Yeahs concert, bringing in bold faces like Gwen Stefani, Courtney Love, and Mary-Kate Olsen. But outside the venue this week (and over the phone), Sevigny told us that luring celebrities is actually not his aim, and the two are already weighing spaces in Brooklyn for their next project. Below, he and Khan sound off on their interest in Williamsburg and their weariness with luxury hotels.

How's your New York Fashion Week been?
PS: Hell week. I'm just trying to fucking make it through. It's great for spaces, but Fashion Week is a necessary evil. [Laughs.] I used to enjoy Helmut Lang shows in the nineties, but he's not there anymore. I liked Fashion Week when I was new to it, I guess.
NK: I haven't gone to a single show yet.

So, do you think this space is a deviation from past projects or are you building a consistent Sevigny-Khan vibe?
NK: This has kind of a Sway in the nineties vibe. But there's been a void for this in New York for so long. It's just like everyone here is trying to outdo each other with money and build a better, bigger, strong place. But at the end of the day, it's about the essence of the space and the people there; that's what makes it fun.

Do you want people to actually be having sex and doing drugs here? Seems that way from the interior design.
PS: The sex theme isn't permanent; we're going to change the interior quarterly. But as opposed to something with a chi-chi-er artist, we've got a down and dirty theme at the moment. It's the opposite of the times. There were spaces in the seventies — Max's, CB's — they weren't glamorous, they were just fun. New York City wasn't all about supermarkets and retail outlets, and that's what hotels here are kind of turning into. We want people to get laid in the bathroom.

Do you think peoples' behavior at parties is more prude now?
PS: Oh, for sure.
NK: There used to be an actual uptown and downtown, but now it's more homogenized.

Is Brooklyn versus Manhattan today what uptown versus downtown used to be?
NK: Downtown kids got higher rents and they're all in Williamsburg now and we kind of lost them. We lost a lot of artistic people, and those are the people who make things happen.
PS: This space isn't about the person who can roll into town from L.A. with a black card and afford an $18 cocktail. That's not who we're trying to attract.

But how much is a cocktail going to be on a regular night?
NK: I don't know, maybe ten dollars.
PS: There's going to be a Jägermeister machine, too.

Are there any Manhattan venues you like right now?
PS: I like Motor City. I like Lit.

Would you open a space in Brooklyn?
NK I'm looking at a space out there. It's a really great location. I'd love to open a space in Williamsburg. But it's about the space, and we need to both get out and see it.
PS: The Brooklyn scene is great and young and hip. People are interested in actually fun things. We're going to try and do Sunday matinees here to draw some of that crowd in. But it's not dead in Manhattan. There are certainly some holdouts. There are things going on. I moved here a long time ago, and I love the East Side, still. You know, if Varvatos had saved CBGB's and put his boutique in the fucking basement, he'd be a hero right now. So this is one of the last spots left in town with real history to it. Everyone has a story from Don Hill's.

You sound a bit bummed about Manhattan changing in this direction.
NK: I honestly feel obliged to change it. This is the direct opposite of the Manhattan luxury-hotel scene. Things have gone one way for so long; we want to go in completely the opposite direction. Just old school, downtown, gritty New York.
PS: We're not fucking packing up and moving to L.A.

Do you think this place will attract a different crowd than Beatrice, though?
PS: I hope so. I'm sick of those Beatrice fuckers.

Paul Sevigny has revealed to us that that Kenmare, the Mediterranean restaurant he and Nur Khan are opening in the Civetta space, will open for previews during Fashion Week. "I wouldn't even call it a soft opening," he explained. "More than a few things aren't finished. But we made a couple of commitments earlier on to friends and family, so we're going to follow through with those. There's not an exact [opening] date yet, but probably the end of February." Don't let the Fashion Week folks fool you, though; this isn't the second coming: "It's not a new Beatrice," Sevigny said.

"We're working on that. But first of all, there's never going to be a new Beatrice. We never planned for there to be a Beatrice. Beatrice is not a franchise. Kenmare is a small neighborhood restaurant that's going to cater to people who are hungry. That's obviously something different than the Beatrice, I think." A Vogue item (not online) promises "plastered walls, sage banquettes, and bursts of orange inspired by the Almafi Coast of the seventies," and says Chloë Sevigny will be designing the uniforms.

Bobby Flay thinks doughnuts are underrated lately. “Everyone is suddenly on a health kick, but doughnuts are a very important part of cuisine, in my book,” he said at the after-party for the new Tracy Letts play, Superior Donuts. Even the play, about a doughnut shop in Chicago, “gives doughnuts a bad rap,” he said. “Think about it — they’re fried, they’re sweet, they have a fantastic flavor, a great contrast in texture. What’s better than a doughnut? And it goes great with a cup of coffee!” Could health fiends add a few doughnuts to their diets? “Yeah, just serve it with yogurt,” Flay suggested. So where do he and his wife, actress Stephanie March, go for a doughnut? “There was this Krispy Kreme that was really 200 yards away from our apartment. I’m sad it’s closed now,” March said. Foodies gathered at the W Hotel last night for the Taste of Tennis party, where tennis stars served and ate scallops, foie gras, and other specialties cooked up by chefs like Chris Santos of Stanton Social and STK’s Todd Mark Miller. Bethenny Frankel and Andy Roddick worked the bar together. Frankel, inventor of the famed Skinnygirl margarita, and Roddick, all-around-handsome, healthy athlete, served the Skinnyguy Andy Roddick (Don Q clear rum, club soda, splash of ginger ale, splash of lemonade, lemon garnish; served on the rocks) and the Skinnygirl Summer Breeze, a.k.a. the Brooklyn Decker (Bacardi coconut clear rum, club soda, splash of pineapple, splash of orange, pineapple garnish; served on the rocks).

Though Ron Perelman’s Blue Parrot has been soft-open for two weeks, it wasn’t until summer officially started last weekend that the marquee diners showed up. The East Hampton space hasn’t changed much from its last incarnation, which closed in 2006. “Everyone says it’s the same bones, only cleaner,” said one manager on Saturday night. The dining room was crowded and Rachel Zoe and her husband read “We don’t want to bother you” notes passed by college girls and prep-school grads. A small serving of shrimp seviche was not worth $16, but the chipotle guacamole ($12) and the strong Dirty Bird Margarita ($9), served in a salt-lined mason jar, made up for it. Martha Stewart had a good time at the Blue Parrot on Friday night, she told us later at a Ross School benefit in her honor. “The food was surprisingly good,” she said, describing the Blue Parrot as “a joint.” But sometimes even Martha needs to drink booze from a jar: “I’ve been going to the Blue Parrot for eighteen years, so I’m very happy that it’s there.” The restaurant is now open on weekdays, but leave your wireless device at home. “BlackBerrys and guacamole don’t mix,” the menu admonishes. “No texting por favor.”

Governor Paterson planned to have his birthday dinner last night at Mojo, a new Harlem restaurant that just opened last month. “A friend of mine said that it was a small restaurant — they just opened, so they don’t have many customers, so we’ll get a certain amount of privacy,” he told us at the El Museo Gala. (Maybe not. A Harlem blogger posted last month, “I went on what I thought would be an empty Tuesday night for dinner and the restaurant was full with a bar crowd as well.”) Paterson just wants to eat, but that doesn’t always happen. “On another day, we made reservations to eat somewhere and when we got there the owner hired a photographer to take pictures of me eating with all the guests. It totally frustrated me.” Ever the politician, Paterson wouldn’t I.D. the offending restaurant. “That’s a curse. But I bet you’ll never see me in there again.”
