The Times looks at quick reboots, like Craftsteak to Colicchio & Sons and Center Cut to Ed’s Chowder Bar, and reveals that Scott Conant’s Table 8 redo will be called Faustina and open February 5 with a “conspicuously informal tone.” Among the dishes Conant worked on during late nights at Scarpetta: “Olive-oil-poached sardines, veal porterhouse steaks and tajarin pasta with tomato and sea urchin (which Mr. Conant described as ‘sex in a bowl’).” Also of note: Colicchio spent about $400,000 remodeling Craftsteak.
